Chicken Liver Pilaf

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 cups rice
  • 2 cups water
  • 1 lb chicken liver
  • 5 tablespoons butter
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon red chili pepper, minced
  • 1/8 teaspoon allspice
  • 1/8 teaspoon cinnamon
  • salt
  • pepper
  • 1 cup peas
  • 1 cup baby spinach, chopped
  • 6 green onions, chopped
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon parsley, chopped
  • 2 tablespoons pine nuts

Recipe

  • 1 melt 3 tablespoons butter
  • 2 saute onion and garlic
  • 3 dash a little allspice and cinnamon on liver let marinade
  • 4 add rest of spices to onion add chili
  • 5 let sweat
  • 6 wash rice drain
  • 7 add to onion
  • 8 stir so all gets coated
  • 9 add salt and pepper
  • 10 add water bring to a boil.
  • 11 cover
  • 12 simmer 15 minutes
  • 13 in saute pan add butter then liver brown them remove.
  • 14 then saute peas and spinach add to rice when wilted
  • 15 saute pine nuts
  • 16 add to rice add herbs and cover for 5 minutes
  • 17 plate top with liver.
