Chicken Liver Pilaf

Ingredients

- 2 cups rice
- 2 cups water
- 1 lb chicken liver
- 5 tablespoons butter
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 tablespoon red chili pepper, minced
- 1/8 teaspoon allspice
- 1/8 teaspoon cinnamon
- salt
- pepper
- 1 cup peas
- 1 cup baby spinach, chopped
- 6 green onions, chopped
- 1 tablespoon cilantro, chopped
- 1 tablespoon parsley, chopped
- 2 tablespoons pine nuts
Recipe
- 1 melt 3 tablespoons butter
- 2 saute onion and garlic
- 3 dash a little allspice and cinnamon on liver let marinade
- 4 add rest of spices to onion add chili
- 5 let sweat
- 6 wash rice drain
- 7 add to onion
- 8 stir so all gets coated
- 9 add salt and pepper
- 10 add water bring to a boil.
- 11 cover
- 12 simmer 15 minutes
- 13 in saute pan add butter then liver brown them remove.
- 14 then saute peas and spinach add to rice when wilted
- 15 saute pine nuts
- 16 add to rice add herbs and cover for 5 minutes
- 17 plate top with liver.
