Aloha Pineapple Squares

Ingredients
- 2 1/2 cups graham wafer crumbs
- 1/2 cup melted butter
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 cup butter
- 1 1/2 cups icing sugar (confectioners')
- 2 egg yolks
- 1 cup whipping cream
- 1 (19 ounce) can crushed pineapple, drained
Recipe
- 1 combine all ingredients mix graham wafer crumbs, melted butter, sugar and cinnamon.
- 2 reserve 3/4 cup of this mixture for topping.
- 3 press the rest into an 8 x 12 inch pan.
- 4 bake at 350 degrees f for 12 minutes.
- 5 cool.
- 6 with mixer, cream butter and icing sugar.
- 7 add egg yolks and beat until light.
- 8 spread over the cooled crust.
- 9 beat whipping cream until stiff.
- 10 fold in pineapple.
- 11 spread over the second layer in the pan.
- 12 sprinkle the reserved crumb mixture over top.
- 13 chill for several hours or overnight.
- 14 cut into squares to serve.
