Aloha Pineapple Squares

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • 2 1/2 cups graham wafer crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 cup butter
  • 1 1/2 cups icing sugar (confectioners')
  • 2 egg yolks
  • 1 cup whipping cream
  • 1 (19 ounce) can crushed pineapple, drained

Recipe

  • 1 combine all ingredients mix graham wafer crumbs, melted butter, sugar and cinnamon.
  • 2 reserve 3/4 cup of this mixture for topping.
  • 3 press the rest into an 8 x 12 inch pan.
  • 4 bake at 350 degrees f for 12 minutes.
  • 5 cool.
  • 6 with mixer, cream butter and icing sugar.
  • 7 add egg yolks and beat until light.
  • 8 spread over the cooled crust.
  • 9 beat whipping cream until stiff.
  • 10 fold in pineapple.
  • 11 spread over the second layer in the pan.
  • 12 sprinkle the reserved crumb mixture over top.
  • 13 chill for several hours or overnight.
  • 14 cut into squares to serve.
