Chewy Spiced Oatmeal And Cashew Cookies

Ingredients
- 225 g butter
- 200 g caster sugar
- 200 g dark brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 250 g flour
- 1 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons ground ginger
- 1 teaspoon fresh ground black pepper
- 270 g rolled oats
- 150 g chopped cashews
Recipe
- 1 pre-heat oven to 190°c.
- 2 cream the butter and two sugars until fluffy.
- 3 beat in the eggs one by one and add the vanilla.
- 4 in a separate bowl, mix together the flour, bicarbonate of soda, salt, cinnamon, ginger and pepper.
- 5 stir this mix into the butter mixture.
- 6 stir in the oats and cashew nuts.
- 7 chill for an hour in the fridge, then spoon golfball-sized balls of mixture onto a baking sheet and bake for 8-10 minutes.
- 8 when ready, remove from the oven and allow to cool for 5 minutes before removing them from the baking sheet onto a cooling rack.
