Candied Winter Squash

Total Time: 55 mins Preparation Time: 5 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 2 -3 medium butternut squash or 2 -3 medium delicata squash or 2 -3 medium banana squash
  • 1/3 cup brown sugar
  • 2 tablespoons maple syrup
  • 2 tablespoons softened butter
  • 1 teaspoon finely shredded orange rind
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 2 teaspoons pure vanilla extract

Recipe

  • 1 scrub squash, cut in half, and remove seeds.
  • 2 place cut side up in a large roasting pan.
  • 3 in a mixing bowl, combine the rest of the ingredients.
  • 4 spoon mixture into squash halves.
  • 5 cover squash with aluminum foil and bake for 30 minutes.
  • 6 spoon sugar mixture over squash, leave uncovered, and bake another 20 minutes, or until squash is tender.
