Canadian Spiced Carrot Jam

Ingredients
- 4 cups finely chopped raw carrots
- 3 cups sugar
- 2 juice and grated lemons, peel
- clove, allspice and cinnamon
Recipe
- 1 place all the ingredients in a saucepan.
- 2 slowly bring to a boil over medium low heat, stirring constantly. then, stirring often, cook over low heat 30 to 40 minutes, or until mixture is as thick as jam.
- 3 pour into prepared jars leaving a 1/4" headspace.

- 5 boiling water bath for 10 minutes. adjust time according to your altitude.
