Apple Zucchini Pecan Bread

Ingredients
- 4 cups flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 5 eggs
- 1 1/2 cups vegetable oil
- 2 cups sugar
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 2 cups shredded unpeeled zucchini
- 1 cup shredded peeled apple
- 1 1/2 cups chopped pecans
Recipe
- 1 in a large bowl, combine flour, baking soda, cinnamon, nutmeg and salt.
- 2 in another bowl, beat eggs and add oil, sugars and vanilla.
- 3 pour over dry ingredients and mix well.
- 4 stir in zucchini, apples and pecans (batter will be stiff).
- 5 spoon into three greased 8x4x2" loaf pans.
- 6 bake at 350° for 50 to 55 minutes or until tests done.
- 7 cool in pan for ten minutes before removing to a wire rack to cool completely.
