Apple Squash Soup

Ingredients

- 1 1/2 cups chopped onions
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- 1 1/2 tablespoons butter
- 2 1/2 lbs butternut squash, seeded peeled and cubed
- 2 apples, peeled cored and chopped
- 1 1/3 cups apple cider
- 3 cups chicken stock
- salt and pepper
Recipe
- 1 sauté onion in butter until very tender, about 20 minutes.
- 2 add squash, apples, cider and chicken stock. heat to boiling.
- 3 reduce heat and simmer, covered, until squash and apples are tender, about 25 minutes.
- 4 process mixture in food processor until smooth. season to taste with salt and pepper.
