Apple Squash Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 1/2 cups chopped onions
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 tablespoons butter
  • 2 1/2 lbs butternut squash, seeded peeled and cubed
  • 2 apples, peeled cored and chopped
  • 1 1/3 cups apple cider
  • 3 cups chicken stock
  • salt and pepper

Recipe

  • 1 sauté onion in butter until very tender, about 20 minutes.
  • 2 add squash, apples, cider and chicken stock. heat to boiling.
  • 3 reduce heat and simmer, covered, until squash and apples are tender, about 25 minutes.
