Cinnamon Grilled Peaches

Ingredients
- 4 large peaches, pitted and quartered (freestone)
- 8 cinnamon sticks
- 8 fresh mint leaves
- 4 tablespoons unsalted butter
- 1/4 cup brown sugar
- 1/4 cup dark rum
- 1 teaspoon lime juice
- 1 pinch salt (optional)
Recipe
- 1 preheat grill to high.
- 2 brush and oil grill grate.
- 3 using a metal skewer, make a starter hole in the center of each peach quarter (from outside to pit side).
- 4 push a cinnamon stick through a peach quarter.
- 5 add a mint leaf.
- 6 add another peach quarter.
- 7 repeat with remaining cinnamon sticks, peaches and mint.
- 8 combine the butter, sugar, rum and salt in a saucepan and boil until thick and syrupy, 3 to 5 minutes.
- 9 grill the peaches over direct heat until nicely browned on both sides, 2 to 4 minutes per side, basting with the rum butter.
- 10 serve hot.
