Cinnamon Grilled Peaches

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 4 large peaches, pitted and quartered (freestone)
  • 8 cinnamon sticks
  • 8 fresh mint leaves
  • 4 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1/4 cup dark rum
  • 1 teaspoon lime juice
  • 1 pinch salt (optional)

Recipe

  • 1 preheat grill to high.
  • 2 brush and oil grill grate.
  • 3 using a metal skewer, make a starter hole in the center of each peach quarter (from outside to pit side).
  • 4 push a cinnamon stick through a peach quarter.
  • 5 add a mint leaf.
  • 6 add another peach quarter.
  • 7 repeat with remaining cinnamon sticks, peaches and mint.
  • 8 combine the butter, sugar, rum and salt in a saucepan and boil until thick and syrupy, 3 to 5 minutes.
  • 9 grill the peaches over direct heat until nicely browned on both sides, 2 to 4 minutes per side, basting with the rum butter.
  • 10 serve hot.
