Chicken Biryani

Ingredients
- 6 skinless chicken thighs, bone-in, cut into pieces
- 1 inch ginger, minced
- 4 garlic cloves, minced
- 2 tablespoons cilantro, chopped
- 1 teaspoon curry powder
- 1/4 teaspoon ground nutmeg
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 1/2 cups basmati rice
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 bay leaves
- 1 black cardamom pod
- 3 green cardamom pods
- 1 cinnamon stick
- 1 teaspoon cumin seed
- 6 cloves
- 8 black peppercorns
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 onion, sliced thin
- 1 tomato, chopped
- 1 hot pepper, chopped
- 3 1/2 cups water
Recipe
- 1 season the chicken and set aside. place the olive oil and butter in pot on medium-high heat. saute onions till brown. then add in the remaining spices, an cook for about 1-2 minutes on medium heat.
- 2 then toss in the chicken, an cook for about 15 minutes on medium-high heat covered. after that has cooked add in the hot pepper and tomatoes, an cook for 6 minutes covered. constantly stir the food, so it does not burn. then add in the rice and cook for about 2 minutes. add in the water (add more salt to taste) an bring to a simmer. cover an cook on low heat for 25 minutes.
