Chicken Biryani

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 6 skinless chicken thighs, bone-in, cut into pieces
  • 1 inch ginger, minced
  • 4 garlic cloves, minced
  • 2 tablespoons cilantro, chopped
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 1/2 cups basmati rice
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 bay leaves
  • 1 black cardamom pod
  • 3 green cardamom pods
  • 1 cinnamon stick
  • 1 teaspoon cumin seed
  • 6 cloves
  • 8 black peppercorns
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 onion, sliced thin
  • 1 tomato, chopped
  • 1 hot pepper, chopped
  • 3 1/2 cups water

Recipe

  • 1 season the chicken and set aside. place the olive oil and butter in pot on medium-high heat. saute onions till brown. then add in the remaining spices, an cook for about 1-2 minutes on medium heat.
  • 2 then toss in the chicken, an cook for about 15 minutes on medium-high heat covered. after that has cooked add in the hot pepper and tomatoes, an cook for 6 minutes covered. constantly stir the food, so it does not burn. then add in the rice and cook for about 2 minutes. add in the water (add more salt to taste) an bring to a simmer. cover an cook on low heat for 25 minutes.
