Baked Rice Pudding

Ingredients
- 1 ounce short round rice
- 1 pint milk (whole fat unskimmed)
- 2 tablespoons brown sugar
- nutmeg
- cinnamon
- fresh lemon rind
- 1 tablespoon butter
Recipe
- 1 rinse the rice.
- 2 in an ovenproof dish mix the ingredients except the butter.
- 3 place the knob of butter in the centre of the dish and sprinkle a tiny bit of cinnamon.
- 4 cook on middle shelf on a low heat for 1 hour.
- 5 stir halfway through.
- 6 serve with golden syrup, maple syrup, jam, or honey.
