Autumn Lamb Tenderloin

Total Time: 1 hr 20 mins Preparation Time: 30 mins Cook Time: 50 mins

Ingredients

  • Servings: 2
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (3/4 lb) lamb tenderloin
  • 1/2 cup apple juice
  • 1 cup apple pie filling
  • 1/4 cup raisins
  • 1/4 cup pecans, chopped
  • 1/4 teaspoon ground cinnamon

Recipe

  • 1 rub salt and pepper over lamb.
  • 2 place in a resealable plastic bag; add apple juice.
  • 3 seal bag and turn to coat.
  • 4 refrigerate for 30 minutes.
  • 5 drain and discard juice.
  • 6 place lamb on a rack in a roasting pan.
  • 7 compine the pie filling, raisins, pecans and cinnimon; spoon over lamb.
  • 8 bake, uncovered, at 400 for 40-45 minutes or until a meat thermometer reads 160.
