Chunky Apple Cake

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 2 cups granulated sugar
  • 1 1/2 cups canola oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup coarsely chopped walnuts
  • 1 cup raisins
  • 4 granny smith apples, peeled coared and coarsely chopped

Recipe

  • 1 in large mixing bowl combine sugar, oil, eggs, and vanilla. mix with an electric mixer until well combiined (about 2 minutes).
  • 2 in seperate bowl wisk together flour, soda, salt, cinnamon and nutmeg.
  • 3 add dry ingredients to liquid mixing with an electric mixer--batter will be thick.
  • 4 fold in walnuts, raisins and apples until all is incorporated.
  • 5 pile batter into a well greased and floured 12 cup bundt pan or well greased and floured 9 x 13 x 2 pan.
  • 6 bake for one hour at 350 or until cake tester comes almost clean.
  • 7 if using bundt pan let cake cool in pan for 20 minutes and turn onto to rack to continue cooling.
  • 8 if using 9 x 13 x 2 pan cool in pan and cut cooled cake into squares and serve directly from pan.
