Banana Pecan Breakfast Bread

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 1 1/2 cups ripe mashed bananas (about 3)
  • 1/2 cup applesauce
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup plain fat-free yogurt
  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 tablespoons ground flax seeds
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup chopped pecans (or walnuts, sunflower seeds, pumpkin seeds, or your favorite combination)

Recipe

  • 1 in a medium bowl, mash the bananas.
  • 2 add applesauce, sugar, eggs and yogurt; combine thoroughly.
  • 3 in a small bowl, combine flours, flax, baking soda, cinnamon and salt.
  • 4 add dry ingredients to wet ingredients; stir until just combined.
  • 5 gently stir in vanilla and pecans.
  • 6 pour batter into a greased 8x8 pan. bake at 350° for 50 minutes. bread is done when the top springs back when lightly pressed.
