Blintz Soufflé

Ingredients

- 1 dozen blintzes
- 6 large eggs
- 1 1/2 cups sour cream
- 1/4 cup sugar
- 1 tablespoon vanilla
- 1/4 cup butter, melted
- 1/4 teaspoon cinnamon
Recipe
- 1 coat blintzes on both sides with butter.
- 2 sprinkle with cinnamon.
- 3 place blintzes in buttered 9x13" pan, one inch apart so that blintzes and soufflé can be served.
- 4 in blender, combine eggs, sour cream, sugar, and vanilla.
- 5 pour over blintzes.
- 6 bake at 350f 40 minutes, until soufflé puffs up.
