Baked Spelt (farro) Pudding

Ingredients

- 1/2 cup uncooked spelt, rinsed and drained
- 4 cups milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/8 teaspoon ground cardamom
- 1 vanilla bean, split lengthwise
- cooking spray
- 1 dash cinnamon
Recipe
- 1 put the spelt in a medium pan, cover it and go 2 inches above it with water.
- 2 bring it to a boil.
- 3 cook it for 2 minutes.
- 4 remove it from the heat.
- 5 cover and let it sit for 1 hour.
- 6 drain the spelt.
- 7 put it in a food processor and process it for 45 seconds or until it looks like coarse meal.
- 8 preheat the oven to 275 degrees.
- 9 mix the spelt, the milk, sugar, salt, cardamom, and vanilla in a 2 quart dish that you have sprayed with cooking spray.
- 10 bake for 3.5 hours.
- 11 stir it every hour to make sure that a skin doesn't form on the top.
- 12 let it sit for 5 minutes.
- 13 sprinkle it with cinnamon.
- 14 serve it warm or cold.
