Chewy Spiced Oatmeal And Cashew Cookies

Ingredients

  • 225 g butter
  • 200 g caster sugar
  • 200 g dark brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 250 g flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon fresh ground black pepper
  • 270 g rolled oats
  • 150 g chopped cashews

Recipe

  • 1 pre-heat oven to 190°c.
  • 2 cream the butter and two sugars until fluffy.
  • 3 beat in the eggs one by one and add the vanilla.
  • 4 in a separate bowl, mix together the flour, bicarbonate of soda, salt, cinnamon, ginger and pepper.
  • 5 stir this mix into the butter mixture.
  • 6 stir in the oats and cashew nuts.
  • 7 chill for an hour in the fridge, then spoon golfball-sized balls of mixture onto a baking sheet and bake for 8-10 minutes.
  • 8 when ready, remove from the oven and allow to cool for 5 minutes before removing them from the baking sheet onto a cooling rack.
