Candied Yams, Heart Healthy

Total Time: 1 hr 5 mins Preparation Time: 35 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 3 yams (enough to yield 3 cups)
  • 1/4 cup splenda brown sugar blend, packed
  • 2 teaspoons flour, sifted
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (or more to taste)
  • 1/2 teaspoon ground nutmeg
  • 3/4 teaspoon orange peel
  • 2 teaspoons soft tub margarine
  • 1 cup orange juice

Recipe

  • 1 cut yams in half and boil until tender but firm (about 20 minutes).
  • 2 when cool enough to handle, peel and slice into 1/4-inch thickness.
  • 3 combine sugar, flour, salt, cinnamon, nutmeg, and grated orange peel.
  • 4 place half of the sliced yams in a medium-sized casserole dish.
  • 5 sprinkle with spiced sugar mixture.
