Candied Sweet Potatoes With Apple

Ingredients
- Servings: 6
- 2 lbs sweet potatoes, peeled & cut into 1/2 inch slices
- 1/2 cup packed brown sugar
- 2 tablespoons unsweetened apple juice
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg (my addition)
- 1 medium tart apple, peeled and sliced
Recipe
- 1 place sweet potatoes in a saucepan and cover with water; bring to a boil.
- 2 cover and cook for 10 minutes or until crisp-tender; drain.
- 3 in a bowl, combine the brown sugar, apple juice, salt, cinnamon and nutmeg; set aside.
- 4 arrange cooked sweet potatoes and apple slices in an 8-inch square baking dish coated with non-stick spray. (this is where i would add the dried cranberries too).
- 5 drizzle brown sugar mixture over the potatoes and apples.
- 6 bake, covered, at 350 degrees f, for 25 minutes.
- 7 uncover and continue baking for 20-25 minutes longer, basting occasionally with pan juices.
