Candied Mashed Sweet Potatoes

Ingredients

- 4 lbs sweet potatoes
- 1 cup heavy cream
- 1/2 cup butter
- 3/4 cup brown sugar
- 3/4 cup maple syrup
- 1 tablespoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- marshmallows (optional)
Recipe
- 1 wrap sweet potatoes in foil and bake on 350 until done (approx. 1 hr).
- 2 allow sweet potatoes to cool in foil, this will loosen the skin so you can peel them by hand.
- 3 peel skin off potatoes.
- 4 in a sauce pan combine - butter, brown sugar, maple syrup, salt, cinnamon & cayenne pepper. melt all ingredients.
- 5 in a mixing bowl combine potatoes and cream.
- 6 with a mixer whip potatoes and cream (i used a stand mixer).
- 7 once the potatoes and cream have come together to the consistency of mashed potatoes, fold in the mixture from the sauce pan.
- 8 pour mixture into a baking dish.
- 9 top with marshmallows (optional).
- 10 bake on 350 for 45 minute.
