Candied Mashed Sweet Potatoes

Total Time: 1 hr 45 mins Preparation Time: 1 hr Cook Time: 45 mins

Ingredients

  • Servings: 12
  • 4 lbs sweet potatoes
  • 1 cup heavy cream
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 3/4 cup maple syrup
  • 1 tablespoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • marshmallows (optional)

Recipe

  • 1 wrap sweet potatoes in foil and bake on 350 until done (approx. 1 hr).
  • 2 allow sweet potatoes to cool in foil, this will loosen the skin so you can peel them by hand.
  • 3 peel skin off potatoes.
  • 4 in a sauce pan combine - butter, brown sugar, maple syrup, salt, cinnamon & cayenne pepper. melt all ingredients.
  • 5 in a mixing bowl combine potatoes and cream.
  • 6 with a mixer whip potatoes and cream (i used a stand mixer).
  • 7 once the potatoes and cream have come together to the consistency of mashed potatoes, fold in the mixture from the sauce pan.
  • 8 pour mixture into a baking dish.
  • 9 top with marshmallows (optional).
  • 10 bake on 350 for 45 minute.
