Apple, Raisin And Nut Muffins

Ingredients

- 2 cups grated raw cooking apples
- 1/2 cup brown sugar
- 1/2 cup sunflower oil
- 2 eggs, slightly beaten
- 1 teaspoon vanilla
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1 tablespoon orange zest
- 1 cup whole wheat flour
- 1 cup self raising flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 dash cinnamon (can be increased if you like)
- 1 tablespoon brown sugar
- 1 tablespoon mixed spice (cinnamon + nutmeg + cardamom + ginger - or just cinnamon if you prefer)
Recipe
- 1 preheat oven 200°c and line muffin pan with paper cases or grease them.
- 2 combine apples, sugar, oil, eggs, vanilla and orange peel, mix well.
- 3 add raisins and nuts.
- 4 combine flours, baking powder, baking soda and spice.
- 5 add dry ingredients to the apple batter and mix just until combined, do not overmix.
- 6 pour into muffin pans and sprinkle with a mixture of brown sugar and spice, pressing lightly.
- 7 bake 20-25 minutes or until skewer inserted in the center comes out clean, let cool on a rack.
