Asian Glazed Chicken

Ingredients

- 1 lb sugar
- 1 teaspoon szechuan peppercorns
- 1 teaspoon fennel seed
- 1 teaspoon whole cloves
- 1/2 cinnamon stick
- 1 star anise
- 3/4 cup dark soy sauce
- 2 cups light soy sauce
- 4 1/2 cups water
- 8 lbs skinless chicken legs
- 6 tablespoons honey
- 1 tablespoon chinese black vinegar
- 2 teaspoons cornstarch
- 2 tablespoons water
- canola oil (as needed)
- cooked rice
Recipe
- 1 place sugar in a pot.
- 2 tie the peppercorns, fennel, cloves, cinnamon and anise in a cheesecloth. place in pot.
- 3 add the soy sauces and water. bring to a boil.
- 4 add chicken. reduce. simmer 20 minutes, stirring often.
- 5 drain. (can reserve liquid for another use if desired).
- 6 let cool. remove meat. shred.
- 7 combine with the honey, vinegar, corstarch and water.
- 8 cover. chill 6 hours.
- 9 stir fry in a little oil to re-heat.
- 10 serve over rice.
