Cinnamon Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 tablespoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup plain yogurt
  • 2/3 cup coconut oil
  • 1 egg
  • 1 cup cinnamon baking chips
  • 1/4 cup sugar
  • 1 tablespoon ground cinnamon

Recipe

  • 1 preheat oven to 350°.
  • 2 mix all dry ingredients in a large bowl.
  • 3 mix all wet ingredients in medium bowl until smooth.
  • 4 add wet ingredients to the dry and stir thoroughly.
  • 5 add cinnamon chips and stir until evenly distributed.
  • 6 fill greased or paper lined muffin tin 3/4 full.
  • 7 sprinkle cinnamon sugar topping over each cup of batter until thoroughly coated. you won't use all the cinnamon sugar.
  • 8 bake for 20-25 minutes or until a wood toothpick comes out clean.
