Cinnamon Griddle Cakes

Ingredients
- 1 1/2 cups all-purpose flour
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1 tablespoon ground cinnamon
- 2 eggs, beaten
- 1 cup milk
- 2 tablespoons light corn syrup
- 1/4 cup butter, melted
- 1 tablespoon vanilla
- 2 cups confectioners' sugar
- 2 teaspoons vanilla
- 1 tablespoon milk
Recipe
- 1 in a medium bowl, combine flour, sugar, salt, baking powder, and cinnamon, set aside.
- 2 in a large bowl, beat together eggs, milk, corn syrup, butter, and vanilla. stir in the flour mixture.
- 3 heat a lightly oiled griddle or frying pan over medium heat. pour approx 1/4 cup batter onto the griddle for each pancake. brown on both sides, serve hot.
- 4 for icing: combine confectioner's sugar, vanilla extract, and enough milk to make a liquid frosting. drizzle over hot pancakes before serving.
