Cinnamon Griddle Cakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 2 eggs, beaten
  • 1 cup milk
  • 2 tablespoons light corn syrup
  • 1/4 cup butter, melted
  • 1 tablespoon vanilla
  • 2 cups confectioners' sugar
  • 2 teaspoons vanilla
  • 1 tablespoon milk

Recipe

  • 1 in a medium bowl, combine flour, sugar, salt, baking powder, and cinnamon, set aside.
  • 2 in a large bowl, beat together eggs, milk, corn syrup, butter, and vanilla. stir in the flour mixture.
  • 3 heat a lightly oiled griddle or frying pan over medium heat. pour approx 1/4 cup batter onto the griddle for each pancake. brown on both sides, serve hot.
  • 4 for icing: combine confectioner's sugar, vanilla extract, and enough milk to make a liquid frosting. drizzle over hot pancakes before serving.
