Chicken With Cherry-ginger Chutney

Ingredients

- 4 medium boneless skinless chicken breast halves, each cut into 4 pieces
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1 tablespoon olive oil
- 1/2 cup dried tart cherry
- 1 large apple, thinly sliced across fruit and seeded
- 1/3 cup coarsely chopped walnuts
- 4 teaspoons packed brown sugar
- 3 tablespoons cider vinegar
Recipe
- 1 rub chicken with salt, pepper, and 1/4 teaspoon each of the ginger and cinnamon.
- 2 in skillet cook chicken in hot oil over medium heat 12 minutes (chicken is no longer pink).
- 3 transfer to serving platter; cover, keep warm.
- 4 add fruit and nuts to skillet; cook, stirring frequently, 2 minutes.

- 6 stir together brown sugar,1 1/4 cup water, vinegar, and remaining ginger.
