Butternut Squash Souffle

Total Time: 1 hr 10 mins Preparation Time: 25 mins Cook Time: 45 mins

Ingredients

  • 3 tablespoons margarine
  • 2 cups hot mashed butternut squash
  • 1 cup sugar
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3 eggs
  • 1 teaspoon vanilla

Recipe

  • 1 add margarine to squash; stir until melted.
  • 2 add sugar, milk, salt, and spices.
  • 3 beat with an electric mixer on low speed until blended.
  • 4 add eggs, beat well.
  • 5 stir in vanilla.
  • 6 turn into a greased casserole dish.
  • 7 bake at 325* until souffle is set.
  • 8 serve immediately.
