Ingredients
- Servings: 250
- 30 lbs carrots, peeled, rinsed and sliced thinly
- water, sufficient for boiling
- 4 1/2 teaspoons salt
- 1 3/4 lbs butter
- 6 1/2 cups wine
- 1 1/2 cups currants
- 1 cup brown sugar
- 4 1/2 teaspoons cinnamon
- 1 1/2 lbs dates, minced
Recipe
- 1 boil the carrots in water with salt for 10 minutes.
- 2 drain and mash carrots.
- 3 stir in all remaining ingredients.
- 4 simmer over low heat until heated through.
