Buttered Carrots For 250

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 250
  • 30 lbs carrots, peeled, rinsed and sliced thinly
  • water, sufficient for boiling
  • 4 1/2 teaspoons salt
  • 1 3/4 lbs butter
  • 6 1/2 cups wine
  • 1 1/2 cups currants
  • 1 cup brown sugar
  • 4 1/2 teaspoons cinnamon
  • 1 1/2 lbs dates, minced

Recipe

  • 1 boil the carrots in water with salt for 10 minutes.
  • 2 drain and mash carrots.
  • 3 stir in all remaining ingredients.
  • 4 simmer over low heat until heated through.
